Two Stacks was founded in 2020 focusing on whiskey blending and bonding in Ireland. They are taking a modern approach to independent bottling of Irish whiskeys, with focus on selecting the finest whiskey from new and established Irish distilleries then combining with maturation in varied, and sometimes unusual, oak casks. Two Stacks Single Malt Double Barrel Irish Whiskey is released at 86 Proof/ 43% ABV and is made with a blend of 10% peated malt (matured in ex-bourbon casks) and 90% unpeated malt (matured in both 40% ex-bourbon and 50% ex-oloroso sherry casks). The origin of the whiskeys is not revealed. 70cl bottles are available through whisky specialist retailers for around £40 while the ‘Dram in a Can’ size is available direct from twostackswhiskey.com.
Our Tasting Notes
The colour is pale lemon yellow. Fresh and vibrant on the nose with grassy malty notes, white peach fruitiness and icing sugar confected sweetness. There is a hint of earthiness which hints at the smokiness within. On the palate there is an initial hit of malty oats and robust fruitiness, like red apple and tropical mango. The sweetness from the nose carries through the whole tasting experience and provides a sociability to this fruity dram. There is also a dried grassy/ hay characteristic that comes through. The smokiness is more prominent on the finish which is balanced by fruity icing sugar sweetness and warming dusty earthiness.
What’s The Verdict?
Two Stacks has balanced their creative streak with classic, almost traditional, Irish single malt character in this whiskey. The mixed use of cask and touch of peat add an extra dimension to whiskey which still feels rather young, not an unfamiliar sensation for a young brand. The peat in particular is used with a deftness of hand that shows some very wise blending is going to be the future defining point for Two Stacks. Introducing their range of whiskies through their incredibly accessible ‘Dram in a Can’ sizing is a great move… plus once that can is opened it would be rude to not relax into things while sipping your way through.
